Amazing lentil soup!

When you hear the word "lentils", you might not get as excited as me. But that is because you haven't eaten them the way that I prepare them! This recipe is cheap, has TONS of flavor, has tons of veggies and it makes a boat load. What's not to like? To get started, you will need the following ingredients:

1 16oz bag of dried lentils, green.

6 cups chicken broth

2-3 stalks of celery, chopped

2 zucchinis, chopped

1 medium onion, diced

2 large carrots, chopped

1 tbs chopped garlic

1 lb ground italian sausage, mild or hot, as you see fit.

2 cans of diced tomatoes, italian spiced if you can find them

1 tbs olive oil

1 tsp cayenne pepper

Brown the sausage on medium high, remove from pan.

Add olive oil, carrots, celery and onion. Sweat for about 7 minutes. Add garlic, cook for two more minutes. Add all the dry spice ingredients!

Combine all ingredients!

Add the tomatoes!

Finally, add the broth!

You are basically done at this point! Just monitor the lentils every 20-30 minutes just to make sure that you aren't running low on water. As this starts to cook, it will really start to thicken as the lentils absorb the broth. And it smells amazing!

And serve! We like to serve this with a toasted bread. This dish has so much flavor. Its packed with veggies and makes a boatload. And did I mention that its cheap to make? A few carrots, an onion, some garlic, a few celery stalks. The most expensive part of the recipe is the sausage, which I usually pick up for about four bucks.
